CRAVE Catering–Wedding at Camrose Hill Flower Farm
This weekend I had the honor of attending the wedding of an old friend of mine in Stillwater, MN at a beautiful destination, the Camrose Hill Flower Farm. Even more of an honor, my friend selected CRAVE Catering to provide the hospitality for the most important occasion of his life based on my endorsement. I have to admit, I was buzzing with nervous anticipation for weeks leading up to the big day. CRAVE Catering does an outstanding job executing anything we commit to, and I knew we would do a fantastic job, but in the world of catering there are always surprises and when you’re dealing with an offsite event an hour outside the Twin Cities, anything can happen.
The ceremony came first (and it went quick, which I always appreciate) and then it was on to the reception which started with a cocktail hour on the beautiful grounds of the flower farm. The lawn was abuzz with celebrating guests, and CRAVE Catering servers were immediately serving us from platters of beautiful hors devours including Kogi Beef Tacos, Bruschetta Caprese, and Hand-crafted Eggrolls. Everything was cooked to perfection, and I was hearing extremely positive feedback from my fellow party guests, many of whom had no idea about my association with CRAVE.
Dinner is always the biggest challenge for catered events, and usually leads to me cooking a frozen pizza when I get home. Entrees at catered events, in my experience, are generally flavorless and overcooked, and how can you expect anything different when they’re cooking for 200 people… and on a farm no less! So naturally I was delighted when our table’s entrées arrived, a duet of beef medallions and chicken roulade, amazingly flavorful, succulent, and cooked to perfection. The beef medallions had a savory gravy that provided an excellent flavor enhancement to the perfectly cooked beef, and the chicken was not only expertly prepared but was stuffed with a mixture of asparagus, prosciutto, and flavored cream cheese that really added to the flavor and texture of the dish. The duet was served on a bed of wild rice (we’re in Minnesota, naturally) and a delicious vegetable medley where the veggies retained their natural flavor and texture, which was a rare but welcome departure from the normal “veggie mush” that is served at catered events.
The fabulous dinner was followed with a show-stealing selection of mini desserts including; mini key lime pie shooters, peanut butter stuffed chocolate lollipops, caramel topped chocolate cupcakes (see accompanying visual evidence of me indulging), and many other delicious selections. The desserts were decadent, fun, and the perfect ending to the perfect meal.
I know, I’m biased, so take it with a grain of salt (or with no salt at all…if you’ve ever eaten at CRAVE, you know salt is not necessary) but this was one of the most memorable meals I’ve ever enjoyed at a wedding. It was almost hard to believe we were an hour outside the cities, on a farm, with no kitchen. The CRAVE Catering staff did a tremendous job with a challenging location, and I went from feeling like an honored guest to being a very proud member of the CRAVE team.
